Good morning from 26 degree hot UK! Birds are chirping as crazy, my neighbours are sun-bathing or mow the lawn wearing shorts, the kids who usually play in the court behind our apartment stay inside. When I came back from a run this morning, I was literally boiling and craving a cold shower.
On a morning like this, there is no better breakfast than a big bowl of banana ice cream! So refreshing and sweet, nourishing but light π It’s the best. I obviously got in touch with it first, when there was a flood of “nicecream” pictures on Instagram, for which I am 100% grateful – they are just so pretty π and inspiring.
Fun fact: The first time I made one myself, I put a whole banana (including the peel) into the freezer. That was one year back in Germany at my parents house… the peel turned completely black and my mom who anyway was a bit sceptical regarding my new dietary habits got even more sceptical when she saw the banana π oh well…since then I have learned that it is way better to but the peeled (!) banana cut into chunks into a tupperware container and place the tupperware container in the freezer. Easy. Non-sceptical moms guaranteed!
In addition to Bananas, I am overly happy to find lots and lots of cheap strawberries at the supermarket again. It is great how the prices easily show which fruits are in season – these days, 400 grams of Strawberries are Β£1,50, next week it might be peaches, and god knows what it will be after that π So, when I go to the supermarket, I usually pick the least expensive fruits knowing that they will also be the tastiest since they are locally produced AND in season β€ I love seasons, and how nature’s products indicate that the earth is turning.
Let’s jump into the recipe now which is probably the most simple one in the world.
Ingredients:
- 2-3 Bananas (chopped, frozen)
- 1/4 cup plant-based milk
- toppings that you love (for the bowls in the photo I used)
- chocolate nibs
- pumpkin seeds
- dried apricots
- pistachios
- granola
- cranberries
- popped amaranth
What to do?:
- Place bananas and milk in a blender and blend – alternatively, if you don’t have a proper jug blender (like me π¦ ), just place a few banana chunks in a big jar and blend them with a bit of pb milk, and blend with a hand blender. Place a few more chunks, blend again and repeat until you have blended in everything.
- Place the mixture in a bowl and decorate with your choice of toppings. VoilΓ , enjoy and fight that heat π
If you steal your mums tupperware for your own freezer in another country, you might still experience “sceptical” mums π
